Baked Caramel Apple Cinnamon Bread Pudding

In a small saucepan, combine the brown sugar, butter, and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes or until thickened. Set aside.

In a small bowl, toss the chopped apples with the lemon juice, granulated sugar, and apple pie spice. Arrange half of the cubed cinnamon bread in a greased 13x9-inch baking dish. Top with the spiced apples and drizzle with half of the caramel sauce. Sprinkle with the chopped pecans, then top with the remaining cubed bread.

In a large bowl, whisk together the eggs, milk, salt, and vanilla. Pour the egg mixture over the bread, making sure all the pieces are evenly coated. Cover and refrigerate overnight.

Remove the strata from the refrigerator 30 minutes before baking. Bake, uncovered, at 350°F for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

In the microwave, heat the reserved caramel sauce until warm and drizzle it over the top of the baked strata.
