In a small saucepan, combine the chopped apple, evaporated milk, sugar, and 1/3 cup chopped walnuts. Cook and stir over medium heat until thickened, then set aside to cool.

In a large bowl, cream the softened butter and both sugars until light and fluffy. Beat in the egg and vanilla extract. Gradually mix in the all-purpose flour and salt until a dough forms.

Scoop the dough into 1-inch balls, flatten them, and place a teaspoon of the apple filling in the center. Fold the dough over the filling and reshape into balls. Arrange the filled cookies 1 inch apart on greased baking sheets.
