Baked Oat and Nut Granola

Preheat the oven to 350°F. Spread the rolled oats on a baking sheet and bake for 5 minutes, then stir and bake for 5 more minutes until lightly toasted.

In a small saucepan, heat the honey and oil over medium heat, stirring occasionally, for 2-3 minutes until warm and combined. Remove from heat and stir in the vanilla.

In a large bowl, combine the toasted oats, nuts, oat bran, and coconut. Pour the honey-oil mixture over the dry ingredients and toss to coat evenly.
