Toss the cubed butternut squash with olive oil, rosemary, thyme, salt, and pepper in a 12-inch cast-iron skillet. Roast for 15-20 minutes until just tender, then remove and keep warm.

In a large bowl, whisk together the eggs, milk, flour, and cayenne. Stir in the shredded cheddar and Parmesan-Romano cheese blend.

Place the butter in the same skillet and heat in the oven for 1-2 minutes until melted. Carefully tilt the pan to coat the bottom and sides with the butter. Pour the egg mixture into the skillet and top with the roasted butternut squash.
