Buttery Baked Date Squares with Oat Crumble

In a small saucepan, combine the dates, brown sugar, and orange juice. Bring to a boil, then reduce heat and simmer for 3-4 minutes, stirring constantly, until thickened and the dates are tender. Remove from heat and stir in the vanilla.

In a large bowl, mix together the flour, oats, brown sugar, cinnamon, baking soda, and salt. Cut in the cold butter until the mixture is crumbly. Press half of the crumb mixture into a greased 13x9-inch baking dish. Carefully spread the date filling over the crust.

Stir the walnuts into the remaining crumb mixture. Sprinkle this over the date filling and press down gently. Bake at 350°F for 25-30 minutes, until lightly browned. Allow to cool on a wire rack, then cut into squares. Serve with vanilla ice cream if desired.
