Grease a 15x10x1-inch baking pan with 1 tablespoon of the butter. In a large saucepan, combine the sugar, corn syrup, and water. Bring the mixture to a boil over medium-high heat, stirring constantly.

Reduce the heat to medium-low and carefully add the remaining butter, cubed. Cook and stir the mixture until a candy thermometer reads 280°F (soft-crack stage). Stir in the cashew halves and continue cooking until the temperature reaches 295°F.

Remove the pan from the heat and quickly stir in the baking soda. Immediately pour the mixture into the prepared baking pan. Allow the brittle to cool completely, then break it into pieces. Store the cashew brittle in an airtight container.
