In a medium bowl, whisk together the eggs and milk until well combined. In a separate bowl, mix the flour, sugar, and salt. Gradually add the dry ingredients to the wet ingredients and whisk until a smooth batter forms. Cover and refrigerate for 1 hour to allow the batter to rest and develop the ideal texture.

Melt 1 teaspoon of butter in an 8-inch nonstick skillet over medium heat. Stir the batter to recombine, then pour about 1/4 cup of batter into the center of the pan. Quickly tilt and swirl the pan to evenly coat the bottom. Cook the crepe until the top appears dry, about 15-20 seconds, then flip and cook the other side until lightly browned, about 15 seconds more. Transfer the cooked crepe to a wire rack. Repeat with the remaining batter, adding more butter to the pan as needed.
