Preheat oven to 350°F. In a Dutch oven, brown the chicken in butter; remove and set aside. In the same pan, sauté the onion, celery, parsley, salt, and pepper until the vegetables are tender. Sprinkle with flour and mix well. Add broth and cider, bring to a boil, and cook until thickened, about 2 minutes. Return the chicken to the pot.
