Place the whole chicken in a large resealable plastic bag and add the cold water. Carefully pour the cooled brine into the bag, squeeze out as much air as possible, and seal. Refrigerate for 3-4 hours, turning the bag occasionally to ensure the chicken is evenly brined.

Preheat the oven to 350°F. Discard the brine, rinse the chicken with water, and pat it dry. Skewer the chicken openings and tie the drumsticks together. Brush the chicken with the canola oil and place it in a roasting pan.
