Creamy Baked Carrot and Broccoli Casserole
This creamy and cheesy Carrot and Broccoli Casserole is a delightful side dish with colorful veggies in a rich, buttery cheese sauce, topped with a crunchy cracker topping.

Preheat oven to 350°F. Bring 1 inch of water to a boil in a saucepan. Add the carrots, cover and simmer for 5-8 minutes until crisp-tender. Add the broccoli, cover and simmer for 6-8 minutes longer until the vegetables are crisp-tender. Drain and set aside.

In a small saucepan, cook and stir the cheese and 1/4 cup of the butter over medium heat until smooth. Stir the cheese sauce into the cooked vegetables until well combined.

Melt the remaining 1/2 cup of butter. Toss the melted butter with the crushed crackers. Spread a third of the cracker mixture in a greased 2.5-quart baking dish. Top with half of the vegetable mixture. Repeat the layers, then top with the remaining cracker mixture.

Bake the casserole uncovered for 35-40 minutes, until heated through and the topping is golden brown.
