Preheat the oven to 350°F. Place the cubed potatoes and water in a 3-quart microwave-safe dish. Cover and microwave on high for 12-15 minutes, or until the potatoes are tender.

Meanwhile, divide the cubed chicken between two greased 8-inch square baking dishes.

Drain the cooked potatoes and place them in a large bowl. Add the sour cream, cheddar cheese, butter, Parmesan cheese, onion soup mix, spinach, carrot, salt, garlic powder, and black pepper. Mash the mixture until smooth.

Spoon the mashed potato mixture over the chicken in the baking dishes. Sprinkle the top with the bread crumbs.

Bake one casserole, uncovered, for 45-50 minutes, or until the chicken is no longer pink. Cover and freeze the remaining casserole for up to 3 months.
