Creamy Baked Feta Pasta with Roasted Tomatoes and Garlic
This delectable Baked Feta Pasta features a creamy, flavorful sauce made from roasted cherry tomatoes, garlic, and a block of tangy feta cheese. Tossed with al dente rigatoni pasta, it's a satisfying and comforting dish that's perfect for any occasion.
Instructions
-
1
Preheat the oven to 400°F. In a 13x9-inch baking dish, combine the cherry tomatoes, halved garlic cloves, and 1/4 cup of olive oil. Place the block of feta cheese in the center, adjusting the tomatoes so the cheese is sitting on the bottom of the dish. Drizzle the remaining 1/4 cup of olive oil over the feta and sprinkle with salt and pepper.
-
2
Bake the feta and tomato mixture for 30-40 minutes, or until the tomato skins start to split and the garlic has softened.
-
3
Meanwhile, cook the rigatoni pasta according to the package instructions until al dente. Drain the pasta, reserving 1 cup of the pasta cooking water.
-
4
Remove the baked feta and tomato mixture from the oven and stir it together, lightly pressing the tomatoes to release their juices. Add the cooked pasta and toss to combine. Stir in enough of the reserved pasta water to reach the desired creamy consistency. Sprinkle the dish with the chopped fresh basil leaves before serving.
