Creamy Bacon and Pea Pasta Carbonara

Cook the spaghetti or linguine in a large pot of salted boiling water according to package directions until al dente. Drain the pasta, reserving 1 cup of the cooking water.

In the same pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Add the peas and cook until heated through, about 2-3 minutes.

Add the cooked pasta to the pot with the bacon and peas. Toss to combine. Stir in the lemon juice, lemon zest, beaten eggs, parsley, and 1/2 cup of the Parmigiano-Reggiano cheese. Add the reserved pasta water as needed to create a creamy sauce.

Season with salt and pepper to taste. Serve immediately, garnished with additional Parmigiano-Reggiano cheese if desired.
