Creamy Chicken and Mushroom Penne Pasta

Cook the penne pasta according to package directions until al dente. Meanwhile, in a large skillet, sauté the diced onion in olive oil over medium heat until softened, about 4-5 minutes. Add the minced garlic and cook for 1 minute longer.

Stir in the cubed chicken and sliced mushrooms. Cook, stirring frequently, until the chicken is no longer pink, about 5-7 minutes. Remove the chicken and mushroom mixture from the skillet using a slotted spoon.

To the same skillet, add the white wine and beef broth. Bring the mixture to a simmer and cook until the liquid is reduced by half, about 15-20 minutes. Reduce the heat to low, then add the softened cream cheese and butter, whisking until melted and smooth.

Whisk in the half-and-half, salt, and pepper. Add the cooked chicken and mushroom mixture back to the skillet and heat through on low. Toss the sauce with the cooked penne pasta and 1/4 cup of the grated Parmesan cheese. Top with the remaining 1/4 cup Parmesan cheese and minced fresh parsley, if desired.
