Crispy Beef and Cheese Quesadillas

Preheat the oven to 475°F. In a large skillet over medium heat, cook the ground beef until no longer pink, breaking it into crumbles as it cooks. Drain any excess fat.

Stir the refried beans, drained green chiles, oregano, cumin, and salt into the cooked beef. Cook over medium-low heat until heated through, about 3-4 minutes.

Brush one side of each tortilla with the melted butter. Spoon about 1/2 cup of the beef mixture onto the unbuttered side of each tortilla, then sprinkle with about 1/3 cup of the shredded cheese. Fold the tortillas in half.

Place the filled quesadillas on a lightly greased baking sheet and sprinkle with paprika. Bake until the tortillas are crisp and golden brown, about 8-10 minutes. Cut each quesadilla into 3 wedges and serve hot.
