Crispy Butter Pecan Coffee Biscotti

Preheat the oven to 350°F. In a large bowl, beat the butter pecan cake mix, flour, melted butter, eggs, maple syrup, instant coffee granules, and vanilla until well blended. The dough will be very thick. Fold in the white baking chips.

Divide the dough in half. On an ungreased baking sheet, shape each portion into a 12x2-inch rectangle. Bake for 30-35 minutes, or until golden brown.

Transfer the baked rectangles to wire racks to cool slightly. Once cool enough to handle, transfer them to a cutting board and slice them diagonally into 3/4-inch thick slices using a serrated knife.

Place the sliced biscotti cut-side down on ungreased baking sheets. Bake for an additional 10-15 minutes, or until the biscotti are firm.

In a small bowl, combine the confectioners' sugar and brewed coffee. Drizzle the coffee glaze over the cooled biscotti and sprinkle with the chopped pecans. Allow the glaze to set before serving.
