Flaky Apple Cinnamon Twists

In a large bowl, combine the yeast and flour; add softened butter and mix well. Add beaten egg yolks and sour cream; mix until a dough forms. Divide the dough into 4 balls, wrap each separately, and refrigerate overnight.

On a floured surface, roll each dough ball into a 9-inch circle. Sprinkle with a mixture of sugar, pecans, and cinnamon. Top with the finely chopped apple. Cut each circle into 16 wedges, then roll up from the wide edge and pinch to seal. Place the twists point-side down on greased baking sheets.

Bake the twists at 350°F until lightly browned, about 16-20 minutes. Immediately transfer the twists to wire racks to cool. For the icing, combine the confectioners' sugar, milk, and vanilla extract until smooth. Drizzle the icing over the cooled twists and sprinkle with additional chopped pecans.
