Fluffy Banana Orange Crepes

In a bowl, whisk together the eggs, milk, flour, melted butter, sugar, and salt. Let the batter rest for 20 minutes.

Heat a lightly greased 8-inch nonstick skillet over medium heat. Pour 1/4 cup of the batter into the center of the pan, then quickly lift, tilt, and rotate the pan to coat the bottom evenly. Cook the crepe until the top appears dry, then flip and cook for 15-20 seconds longer. Remove the crepe to a wire rack and repeat with the remaining batter, greasing the pan as needed.

In a large skillet, combine the cubed butter, sugar, orange zest, and orange juice. Bring the mixture to a boil, stirring to dissolve the sugar. Reduce the heat to medium and add the sliced bananas, cooking until warmed through.

To serve, spoon the warm banana-orange compote onto the crepes, then fold them into quarters. Top with any remaining compote and, if desired, fresh raspberries.
