Grilled Bacon and Blue Cheese Stuffed Peppers

Cut the peppers into quarters, removing and discarding the stems and seeds.

In a small bowl, mix the softened cream cheese, crumbled blue cheese, cooked and crumbled bacon, and sliced green onion until well combined.

Grill the pepper quarters over medium-high heat, or broil them 4 inches from the heat, for 2-3 minutes per side until slightly charred.

Remove the grilled peppers from the heat and fill each quarter with about 1 tablespoon of the cheese mixture. Return the stuffed peppers to the grill or broiler and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
