Grilled Bacon and Corn Stuffed Bell Peppers
These juicy, grilled bell peppers are bursting with a flavorful filling of sweet corn, tangy salsa, melty mozzarella, and crispy bacon bits. A delightful twist on a classic stuffed pepper dish.

Preheat grill to medium heat. In a large bowl, combine the corn, salsa, and chopped green onions. Spoon the mixture into the hollowed-out bell pepper halves.

Place the stuffed pepper halves on a piece of heavy-duty foil and seal the foil tightly around them. Grill the packets for 25-30 minutes, or until the peppers are tender.

Carefully open the foil packets to allow the steam to escape. Sprinkle the stuffed peppers with the shredded mozzarella cheese and crumbled bacon. Return the peppers to the grill for an additional 3-5 minutes, or until the cheese is melted.

Serve the grilled, bacon and corn stuffed bell peppers warm, with additional salsa on the side if desired.
