Hearty Breakfast Burritos with Hash Browns and Sausage

Fry the hash brown potatoes in a large skillet according to package directions, then remove and set aside.

In a large bowl, beat the eggs and add the chopped onions and green peppers. Pour the egg mixture into the same skillet and cook, stirring, until the eggs are set. Remove from heat and gently mix in the hash browns and cooked sausage.

Place about 3/4 cup of the egg and hash brown mixture onto each warm tortilla, top with about 1/4 cup of shredded cheddar cheese, then roll up the burrito. Place the burritos on a greased baking sheet and bake at 350°F for 15-20 minutes, or until heated through. Serve with salsa, if desired.
