Hearty Chicken and Sausage Cassoulet

Preheat oven to 325°F. Season the chicken thighs with salt and pepper.

In a broiler-safe Dutch oven, heat 2 teaspoons of oil over medium heat and brown the chicken on both sides. Remove the chicken from the pan.

In the same pan, sauté the onion in the remaining oil over medium heat until crisp-tender. Add the garlic and cook for 1 minute. Deglaze the pan with the wine, scraping up any browned bits. Stir in the tomatoes, herbs, and the browned chicken.

Transfer the pan to the oven and bake, covered, for 30 minutes. Stir in the beans and kielbasa, then bake, covered, for 20-25 minutes longer, until the chicken is tender.

Remove the pan from the oven and discard the bay leaf. Stir in the crumbled bacon. In a small bowl, toss the breadcrumbs with the parsley and minced garlic. Sprinkle the breadcrumb mixture over the top of the cassoulet. Place the pan under the broiler, 4-5 inches from the heat, and broil for 2-3 minutes until the breadcrumbs are golden brown.
