In a medium bowl, combine the egg, cracker crumbs, onion, salt, pepper, and sage. Add the ground beef and mix well. Shape the mixture into 4-6 evenly sized patties.

In a medium skillet, cook the beef patties over medium-high heat until browned, about 4-5 minutes per side. Drain any excess fat and remove the patties to a platter, keeping them warm.

In the same skillet, sauté the mushrooms in the butter for 2 minutes. Stir in the flour and blend well. Gradually add the water and beef bouillon, cooking and stirring until the gravy is smooth and thickened, about 5 minutes. If desired, stir in the browning sauce. Return the beef patties to the gravy and cook, uncovered, over low heat until heated through, about 10 minutes, turning the patties occasionally.
