Peel and coarsely shred the apple, then let it stand in a colander for 15 minutes to drain excess moisture. Blot dry with paper towels.

In a large bowl, combine the shredded apple, egg, parsley, sage, garlic, salt, pepper, and red pepper flakes. Add the ground turkey and mix gently until well combined. Form the mixture into sixteen 2-inch patties and place them on waxed-paper-lined baking sheets. Refrigerate for 8 hours or overnight.

In a large nonstick skillet, heat 2 teaspoons of olive oil over medium heat. Cook the patties in batches for 3-4 minutes per side, or until golden brown and cooked through (165°F). Add more oil as needed between batches.
