Cover the thawed bread dough and let it rise in a warm place until doubled in size. Preheat the oven to 350°F.

In a large skillet, cook the sausage, mushrooms, and onion over medium-high heat until the sausage is no longer pink, breaking it up into crumbles, about 6-8 minutes. Drain the excess fat and transfer the mixture to a bowl to cool.

Roll each loaf of dough into a 16x12-inch rectangle. Spread half of the sausage mixture over each rectangle, leaving a 1-inch border. Roll up the dough jelly-roll style, starting with the short side, and pinch the seams to seal.
