Baked Cheeseburger Bombs with Bacon and Pickles

Preheat oven to 350°F. In a large skillet, cook the ground beef and onion over medium heat until the beef is no longer pink and the onion is tender, about 3-4 minutes, breaking up the beef into crumbles. Drain any excess fat.

Stir the cooked bacon, ketchup, mustard, and chopped pickles into the beef mixture. Allow to cool slightly.

On a lightly floured surface, roll each biscuit into a 5-inch circle. Place about 1 tablespoon of the cheese in the center of each biscuit, then top with 2 tablespoons of the beef mixture. Bring the biscuit dough over the filling to the center and pinch to seal. Place the sealed bombs seam-side down on a parchment-lined baking sheet.

Brush the tops of the biscuits with the beaten egg and sprinkle with the sesame seeds. Bake for 18-20 minutes, until the biscuits are golden brown. Serve the cheeseburger bombs warm.
