Baked Chicken and Cheese Chimichangas

Preheat oven to 375°F. In a bowl, combine the cubed chicken, 3/4 cup picante sauce, shredded cheese, 1/4 cup chopped green onions, cumin, and oregano. Spoon 1/2 cup of the chicken mixture down the center of each warm flour tortilla. Fold the sides and ends over the filling, then roll up the tortilla to form a chimichanga.

Place the chimichangas seam-side down in a baking pan coated with cooking spray. Brush the tops with the melted butter. Bake for 20-25 minutes, until heated through. For extra crispiness, broil the chimichangas for 1 minute. Top with the remaining picante sauce and green onions. Serve with sour cream, if desired.
