Instructions

  1. 1

Preheat the oven to 350°F. In a small bowl, combine the 1 cup of all-purpose flour and 3 tablespoons of confectioners' sugar. Cut in the 1/2 cup of cold, cubed butter until the mixture is crumbly. Press the mixture into a lightly greased 13x9-inch baking pan. Bake for 10-12 minutes or until lightly browned. Allow to cool on a wire rack.

In a small bowl, whisk together the 2 eggs, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract. In a separate bowl, combine the 1/4 cup of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Add the dry ingredients to the egg mixture and mix well. Fold in the 3/4 cup of chopped walnuts, 1/2 cup of quartered maraschino cherries, and 1/2 cup of sweetened shredded coconut. Spread the filling over the cooled crust. Bake for 20-25 minutes or until the filling is firm. Allow to cool completely on a wire rack, then cut into bars.
