Creamy Asparagus Beef Rolls

Bring 1-1/2 cups water to a boil in a large skillet. Add asparagus, cover and boil for 2-3 minutes until crisp-tender. Drain and immediately place in ice water to stop the cooking. Drain and pat dry.

In a small bowl, mix the cream cheese and horseradish until well combined. Lay the beef slices flat and spread a thin layer of the cream cheese mixture over each one. Top each with an asparagus spear, then roll up tightly. Refrigerate until ready to serve.
