Crispy Chicken Salad Bites
Tender chicken salad with savory bacon, earthy mushrooms, crunchy pecans, and sweet apple, served in crisp bread cups. A delightful bite-sized appetizer perfect for gatherings or a special treat.

In a bowl, combine the diced chicken, crumbled bacon, chopped mushrooms, pecans, and diced apple. Mix in the mayonnaise, salt, and pepper until well coated.

Preheat the oven to 350°F. Using a 3-inch round cookie cutter, cut rounds from the bread slices. Brush both sides of the bread rounds with the melted butter and press them into ungreased mini muffin cups.

Bake the bread cups for 11-13 minutes, until golden brown and crisp. Allow to cool for 3 minutes before removing from the pans to wire racks to cool completely.

Spoon about 1 tablespoon of the chicken salad mixture into each of the crisp bread cups. Cover and refrigerate for up to 2 hours. Just before serving, sprinkle the appetizers with the minced fresh parsley.
