Creamy Baked Cauliflower and Ham Casserole

Preheat the oven to 350°F. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-10 minutes until tender. Drain and set aside.

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2 minutes. Gradually whisk in the milk and bring to a boil. Reduce heat and simmer, stirring constantly, until the sauce thickens, about 2-3 minutes. Remove from heat and stir in the cheddar cheese and sour cream until smooth.
