Creamy Baked Ham and Potato Pot Pie
This comforting and creamy ham and potato pot pie features a flaky pie crust, tender au gratin potatoes, sweet peas and carrots, and savory cubed ham in a rich, creamy sauce.

Preheat oven to 400°F. In a large bowl, combine the au gratin potato mix, water, peas, carrots, ham, cream of chicken soup, mushrooms, milk, sour cream, and pimientos. Transfer to an ungreased 2-quart round baking dish.

Unroll the pie crust and roll it out to fit the top of the baking dish. Place the crust over the potato mixture, flute the edges, and cut slits in the crust. Bake until the crust is golden brown, 40-45 minutes. Let stand for 5 minutes before serving.
