Preheat oven to 375°F. In a shallow bowl, combine the flour, sugar, salt, and cayenne. In another shallow bowl, beat the egg and milk. Place the cornflake crumbs in a third bowl. Pat the green tomato slices dry, then coat them with the flour mixture, dip them into the egg mixture, and finally coat them with the cornflake crumbs.

In a large nonstick skillet, heat 4 teaspoons of oil over medium heat. Fry the breaded tomato slices, 4 at a time, for 3-4 minutes per side or until golden brown, adding more oil as needed. Drain the fried tomatoes on paper towels.
