Split the lobster tails in half lengthwise. Using scissors, cut along the edge of the shell to loosen the cartilage covering the tail meat from the shell, then remove and discard the cartilage.

Preheat the oven to 375°F. Pour the water into a 13x9-inch baking dish and place the lobster tails in the dish, cut side up. Combine the parsley, salt, and pepper, then sprinkle the mixture over the lobster tails. Drizzle the melted butter and lemon juice over the top.

Bake the lobster tails, uncovered, for 20-25 minutes, or until the meat is firm and opaque. Serve the baked lobster tails immediately, with lemon wedges and additional melted butter on the side, if desired.
