Grilled Chicken and Shrimp Skewers with Peanut Sauce

Instructions

  1. 1

Thread the shrimp and chicken cubes alternately onto 12 metal or soaked wooden skewers. Place the skewers in a large shallow dish and set aside.

  2. 2

In a small skillet, sauté the chopped green onions in butter until crisp-tender. Add the minced garlic and cook for 1 minute longer. Stir in the minced parsley, white wine (or chicken broth), lemon juice, and lime juice. Remove from heat and let cool slightly. Pour the marinade over the skewers, turning to coat. Cover and refrigerate for 4 hours, turning the skewers occasionally.

  3. 3

To make the peanut sauce, melt the butter in a small saucepan over medium heat. Add the chopped onion and cook until tender. Stir in the reduced-sodium chicken broth, chunky peanut butter, brown sugar, lemon juice, lime juice, salt, dried herbs, and cayenne pepper. Cook and stir until the sauce is well blended. Remove from heat and set aside.

  4. 4

Grill the skewers over indirect medium heat or broil them 4 inches from the heat, turning occasionally, until the shrimp turn pink and the chicken is cooked through, about 7-8 minutes. During the last minute of cooking, brush the skewers with 1/4 cup of the peanut sauce. Serve the remaining peanut sauce alongside the grilled skewers, along with optional chopped peanuts and lime wedges.
