Dust the chicken pieces with flour and season with salt and pepper. In a large skillet, brown the chicken on all sides in the olive oil and butter over medium-high heat. Remove the browned chicken to a platter.

In the same skillet, sauté the onion, celery, bell pepper, and mushrooms for about 5 minutes until softened. Stir in the diced tomatoes, tomato sauce, tomato paste, red wine (or water), herbs, garlic, and sugar. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.

Return the browned chicken to the skillet, cover, and simmer for 45-60 minutes, until the chicken is very tender. Serve the Chicken Cacciatore over hot cooked pasta and sprinkle with grated Parmesan cheese.
