Seared Garlic Herb Chicken Thighs

Season the chicken thighs with salt and pepper.

Heat the olive oil in a large cast-iron or heavy skillet over medium-high heat. Sear the chicken thighs on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the pan.

Reduce the heat to medium and add the halved garlic cloves and brandy or chicken stock to the pan. Cook, stirring, until the liquid is almost evaporated, about 1-2 minutes.

Stir in the chicken stock, rosemary, and thyme. Return the seared chicken thighs to the pan. Bring the mixture to a boil, then reduce the heat and simmer, uncovered, until the chicken is cooked through and reaches an internal temperature of 170°F, about 6-8 minutes.
