In a large skillet lightly coated with cooking spray, sauté the cubed chicken for 2-3 minutes until no longer pink. Stir in the chicken broth, brown rice, smoked sausage, celery, onion, green pepper, Cajun/Creole seasoning, garlic, hot sauce, and bay leaf. Bring the mixture to a boil.

Reduce heat, cover, and simmer for 50-60 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed. Stir in the diced tomatoes and continue simmering for 10 minutes longer.

Remove from heat and let stand for 5 minutes. Discard the bay leaf. Serve the jambalaya hot, garnished with chopped green onions if desired.
