Sauté the green onions and garlic in butter until tender. Stir in the shredded chicken, chili powder, 1/4 cup broth, and 3/4 cup picante sauce. Heat through and set aside.

In a saucepan, bring the rice and remaining broth to a boil. Reduce heat, cover, and simmer for 20 minutes. Stir in the remaining picante sauce, cover, and simmer for 5-10 minutes until the rice is tender. Combine the rice mixture with the chicken mixture, then add the olives and 2 cups of cheese.

Preheat the oven to 375°F. Spoon 1 cup of the filling onto the center of each warm tortilla. Fold the sides and ends over the filling, then roll up the burritos. Arrange the burritos in two ungreased 13x9-inch baking dishes. Sprinkle the remaining cheese over the top. Cover and bake for 10-15 minutes until heated through. Serve with additional picante sauce and cheese.
